Just because you're on the road shouldn't mean that you need to live off basic and boring meals. Road trippers need proper food to fill their bellies and fuel their adventures. Through our series, 'Cooking In Campers', we hope to show you just some of the simple and delicious dishes you can make in the kitchen of your JUCY Camper.


Corn fritters are the perfect pick me up for a tired traveler! Simple to prepare and sure to satisfy.

Here's how to make it:

  • 1 avocado, mashed
  • 1 teaspoon of minced garlic
  • 1 tablespoon of lemon juice
  • a pinch of salt
  • a pinch of pepper
  • ½ a cup of cherry tomatoes, diced
  • ½ a cup of capsicum, diced
  • ¾ cup of standard flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of salt
  • a pinch of pepper
  • 1 egg
  • 1 can (440g) of creamed sweetcorn
  • cooking oil


  1. Mash avocado.
  2. Add minced garlic and lemon juice.
  3. Season with a pinch of salt and pepper.
  4. Add diced cherry tomatoes and diced capsicum. Mix well and put aside.  
  5. Sift the flour, baking powder, salt and pepper to taste into a bowl.
  6. Add the beaten egg and creamed sweetcorn. Mix well to combine into batter. 
  7. Heat the oil in a frying pan.
  8. Drop spoonful’s of fritter mixture into the pan. Cook until golden then turn and cook the other side. 
  9. Remove from pan. Top with a spoonful of guacamole and a sprinkling of chopped parsley.
  10. Enjoy!
